Holiday Recipe – Fruit Cocktail
RICH & CREAMY FRUIT COCKTAIL
Ingredients:
- 2 Cups canned fruit cocktail
- ¼ C butter
- 1 Tetrapack all purpose cream
- (about 1 Cup)
- ½ bar cream cheese softened
Directions:
- In a glass bowl, drain fruit cocktail. Discard the syrup.
- In a separate bowl, mix together butter, all-purpose cream and cream cheese.
- Blend till smooth. (Or you can leave some cream cheese bits for added texture)
- Pour into the fruit cocktail and gently toss till combined.
- Chill.
REFRIGERATOR CAKE
Ingredients:
- 2 Cups Rich and Creamy Fruit Cocktail
- ½ loaf cake, sliced thick to fit freezing dish
- 2 Tbsp rum
- 4 Tbsp sugar syrup
- (brown or white sugar boiled in 1:1 water till dissolved)
Directions:
- In a freezing dish, lay the cake slices.
- Combine rum with sugar syrup and brush on the surface of the cake slices.
- Top with chilled Rich and Creamy Fruit Cocktail and Freeze!
DULCE DE LECHE SAUCE
Ingredients:
- 1 small can condensed milk (1/3 Cup)
- 1 Tetrapack all purpose cream
- 2 Tbsp sugar
- 4 egg yolks, in a separate bowl
Directions:
- On LOW HEAT, heat pan.
- Pour in condensed milk and then all purpose cream.
- Combine and add brown sugar.
- Keep stirring to prevent burns.
- Add some of this mixture to the egg yolks
- Mix well to blend, then pour the egg mixture into the cream mixture.
- Gently stir constantly while blending all the ingredients till thickened.
- Cool thoroughly before using.
This sauce can be used for cakes, as fillings, on ice cream, on fresh fruits.
