1 Kilo chicken, whole or chicken breasts
2 Cups cold water
1 Cup soy sauce
3 Tbsp Chinese rice wine
1 pc ginger, peeled (2-inch finger sized)
3-5 Tbsp sugar
Sesame Oil, to brush chicken
Salt and white pepper, to taste
Star anise, as desired
Wash chicken thoroughly in cold water, then pat dry.
In a pot, combine cold water, soy sauce, rice wine, ginger, sugar and star anise.
Bring to a boil, then add the chicken.
Measure that the liquid to reach chicken halfway.
Bring to boil, then to a simmer. Keep covered.
Cook till chicken is very tender.
Remove from pot and cool slightly.
Brush with sesame oil, then slice into serving portions.
Boil sauce to desired thickness and serve on the side.
